Today, self-care takes the form of a roasted tomato sauce with a dash of garlic and basil.
Julie and I, in a moment of mutual support, both went out and bought a box of tomatoes, thinking the other too busy to handle such a task.
The result? A lot of tomatoes. It could have been a disaster, but we adapted. This mountain of tomatoes was perfect for roasting, blending, and serving with some courgette on fresh pasta.
I really enjoying making this sauce because it’s easy and it makes me feel like a chef.
I feel like a chef because I learnt the recipe from a chef one stormy night in west Wales. We had come over to the farm where he lived to play board games. When we arrived, dripping wet with the crash of thunder behind us, he was putting the tomatoes in the oven to roast. After a few games of Mexican Train (the one and only time I have played this board game – something I need to remedy), we were served a dish which had the roasted tomatoes as a base sauce.
It tasted heavenly. I instantly asked how he made it.
So now I can make this wonderful tomato base sauce too. And I feel like a chef. And it reminds me of storms and good food and wine. And I get to remember that wonderful night every time I eat it.
